This past June we had been observing stay at home orders since mid-March. Which meant for us, staying put as much as possible, only going out to run to the store or do quick errands. Thanksgiving in Rincon, Puerto Rico

We rolled into Rincon on Thanksgiving day sometime after noon. Hungry for lunch, we headed towards Balnearo de Rincon thinking we could perhaps find a place along the water to grab a bite. We passed through an archway to see a restaurant with a buffet right on the water. Turns out it was a Thanksgiving feast for their employees. We took a moment to enjoy the sun while the husband spoke with the locals. April 2019 we made a trip to England and France and scratched some things off our ‘bucket list.’ Chiefly for me, I had wanted to visit Mont St. Michele since 1996, as I didn’t go at the time and had regretted it since. In planning our trip I wanted to stay in the Normandy area for a few days to see the country side and local villages. I love seeing and wandering smaller towns as opposed to the bigger cities. I have been many places in the world including Mexico, Hawaii, Alaska, Puerto Rico, all over the US and Europe- most recently in Italy, France and England. How do you choose? We all have that moment when we immediately regret something. Right? We were waiting for the train and my niece was using the restroom. Vegan in Paradise

Puerto Rican food is often fried, usually meat of some sort. It’s abundant and easily accessible in restaurants, roadside stands and by the beach. When eating healthy and mostly vegetarian if not vegan, it can be a challenge finding food that is satisfying. I love that the island has an abundance of fresh fruits such as mango, avocado, papaya, coconut, etc. Eating local is the best way to immerse yourself into the culture of where you are.
